On today's episode I'm gonna make
this apple and cheddar garden burger.
Now the thing with this combination,
the reason I wanted todo something with it,
is because growing up,
I think I've mentioned this before,
growing up I always usedto go to Apple Hill.
I grew up in Sacramento, California.
And every fall we would go to Apple Hill,
which is just filled with apple fritters,
apple butter, apple cider,
like all these fresh foods and drinks
just made from apples
'cause it's just tons andtons of apple orchards.
And one of my favorites was
you get this hot slice of apple pie
with just a slice of cheddar cheese
melted over the top of it,
which seems kinda weird,
like apple pie and cheddar cheese,
but once I had that,
I was so in love with it.
It was just a great combination.
And I kinda wanted to pay alittle bit of a tribute to that.
I love that combo.
Outside of just drinking wine
and having apples and cheese to snack on.
So this garden burger issort of a throw back to that.
I think you're gonna like it.
So the first thing we're gonna do here is
saute our onions,
kinda actually fry them actually.
We wanna bring all the moisture out,
sort of caramelize them a bit
and then let them get a little bit crispy,
not all the way crispy.
You don't want them completely black,
but just a little bit.
So, that's our first step here.
I love the sound of sauteing onions.
It just, I don't know,
you know yumminess is gonnahappen when you do it.
They're starting to getkinda nice and brown there,
so I'm just gonna add a splash more oil,
just a little bit.
And then I'm gonna addin my other ingredients,
which are the serrano chili
and some fresh garlic.
And that's lookingpretty mush ready to go.
Let's move onto our next steps.
We're gonna go ahead andadd our sauteed ingredients
to a large mixing bowl,
and our tablespoon of fresh thyme.
Let's add in our salt.
And now what we're gonna do
is we're gonna take our cup of rice
and our ground oats,
and we're gonna go puree this,
run this through the food processor
and make it nice and pasty,
so it'll help keep everything together.
So I'm gonna go do that.
Now we're gonna add in our cubed cheese.
So the reason I cube thisinstead of shredding it
is because when youmake the veggie burgers,
I want to have those sortabursts of sharp cheese,
and this will kindahelp that a little bit.
So add the rice and the oat flour there.
And then we're just gonnawork it in with our hands.
You could use a spoon, butreally it's just easier
to do with your hands.
It's really gross, (laughs)
but it is easier.
So, I'm just gonna work that in.
And then we'll chop up our apples
and work in the apples,
and also work in the bread crumbs,
and this will be ready.
This will be a reallyamazing fall veggie burger
with the cheese and the apple.
I mean you can't really go wrong.
Now we're gonna work in our apples.
I do this at the last moment because,
well, apples turn brown asyou know, when you cut them,
so I wanna wait to deal with them.
I don't want them to be brown,
yeah, even though I'm gonna fry it,
just it's an aesthetic thing.
So work the apples in.
Let's add in our cup of bread crumbs.
Let's not add the whole bag.
Go ahead and work that in.
Once again, you can use a spoon
if you don't wanna get your hands dirty,
but you're gonna haveto touch these anyway
'cause you kinda have tocompress the veggie burgers.
You're gonna have toroll them up in a ball
and then flatten them out to fry them,
so you're gonna get messy anyway,
you might as well start now.
Besides, it's more fun.
Right?
OK, so that is more or less combined.
And next I'm gonna rollout the veggie burgers.
Now let's just go aheadand fry these babies up.
That sharp cheddar cheeseis starting to melt.
Looks great.
It's gonna be tasty.

RECIPE http://jerryjamesstone.com/recipe/apple-cheddar-burger/ SOCIAL MEDIA https://facebook.com/jerryjamesstonedotcom http://twitter.com/jerryjamesstone INGREDIENTS ¼ pound Granny Smith Apples, medium dice (2 apples) ½ cup Red Onions, chopped (1/4 pound) 2 cloves Garlic, minced 1 tablespoon minced Serrano Peppers 1 cup cooked Rice 3 tablespoons rolled Oats, ground 4 ounces extra sharp Cheddar, medium dice 1 tablespoon fresh Thyme, chopped ½ teaspoon Sea Salt 1 cup Panko Bread Crumbs Olive Oil INSTRUCTIONS: 1. Warm 1 tablespoon of olive oil in a medium fry pan and add in the ½ cup of red onion, cooking them until they are brown and slightly crispy, almost fried. Add more oil as needed. 2. Add the 2 cloves of garlic and the tablespoon of serrano and saute just until the garlic begins to sweat. 3. Puree the 1 cup of cooked rice along with the 3 tablespoons of ground rolled oats in a food processor until combined and paste like. 4. In a large mixing bowl combine the sauteed ingredients, tablespoon of thyme along with the ½ teaspoon of salt, mixing well. 5. Add in the 4 ounces cheese and the rice mixture; combine. 6. Work in the 1 cup of breadcrumbs. It is probably easiest to do this with your hands. 7. Using a biscuit cutter, make your veggie patties. You don't have to do this but I am a bit anal retentive. 8. Add one tablespoon of olive oil to a cast iron skillet and warm it over a medium-high heat. Fry the burgers til browned on each side, adding more oil as needed. Enjoy!
